Pretzels
- 4 ½ Cups of flour
- 1 ½ Cups of lukewarm water
- 1 Tbsp of light brown sugar
- 2Tsp of kosher salt
- 2 ¼ tsp of fast-acting dry yeast
- 4 Tbsp of melted unsalted butter
- Coarse sea salt
Baking soda water bath
- 10 Cups of water
- ⅔ Cup of baking soda
Egg wash
- 1 Egg yolk
- 1 Tsp of water
Pizza toppings
- 1 small jar of pizza sauce
- 1 Small pack of shredded cheese (Cheddar or mozzarella)
- 1 Pack of mini pepperonis
How to make Mickey’s Pretzel Pizza
Prep time – 20 minutes
Bake time – 12 minutes
Rise time – 1 Hour
Additional time – 4 minutes
Total time – 1 Hour 36 minutes
- Add warm water, sugar, and yeast to a large bowl. Whisk to dissolve the yeast. Once you have combined the ingredients you can then set the bowl aside for 5-10 minutes or until foamy.
- Add the flour, salt, and melted butter. Using your hands, mix until the dough forms. This will help you to get a nice workable dough.
- Knead the pretzel dough with your hands for 8-10 minutes or until the dough is smooth. Once you have done this then grease a large bowl and add the pretzel dough to it. Cover the bowl with some plastic wrap and set it aside.
- Put the covered bowl in a warm place for about 45 minutes to 1 hour or until the dough has doubled in size. This is the proving period and is a vital step for the dough.
- In the meantime, preheat the oven to 450 degrees. You can then prepare the baking sheet with parchment paper.
- Put the pretzel dough on your work surface. You can then divide the dough into equal pieces. You should be able to get 8 equal pieces from the size of the dough.
- Roll out each of the 8 pieces of dough into 24-inch ropes. Form one large pretzel circle by twisting the pretzel rope into a large circle. You may want to divide one of the 24-inch ropes into two pieces.
- Form two separate smaller circles by twisting the pretzel rope into Mickey’s ears. Pinch the ears to the head pretzel. Stick a toothpick in each ear to hold it in place. Transfer the formed Mickey pretzel to the prepared baking sheet.
Baking soda bath:
- Add the water for the baking soda bath along with the baking soda in a large pot over high heat bringing the mixture to a boil. Carefully and gently place the pretzels into boiling water for 10 seconds on each side of the pretzel.
Prepping the pretzels:
- Whisk the large egg yolk and water in a medium bowl.
- Transfer the boiled pretzels to the baking sheet.
- Brush the top side of each pretzel with the egg wash mixture. Sprinkle the top of each pretzel with coarse sea salt.
Baking the pretzels:
- Bake at 450 degrees for 10-12 minutes. The pretzels will be a dark golden brown at this point and this shows they are ready.
- Spoon one tablespoon of pizza sauce on the circles of Mickey’s head. Sprinkle the shredded pizza cheese on each pizza.
- Add 8-10 mini pepperonis to each of the pizzas.
- Return them to the oven until the cheese has melted.
- Once the cheese is bubbling take them out of the oven and serve your Mickey Pretzel Pizza.
