How To Make Chocolate Chip Shortbread Cookies

These Minnie Mouse Cookies may look complicated to make but they really are quite simple to pull together. Just follow these steps and you’ll be chowing down on shortbread cookies in no time.

  1. In a large mixing bowl, beat together butter and powdered sugar until light and fluffy. Add in vanilla extract and beat until combined.
  1. Add in flour and mix until flour disappears. Fold in chocolate chips.
  1. Transfer the dough between two pieces of parchment paper and roll out to about ¼ inch thickness. Refrigerate on a flat surface until firm, about 1-2 hours.
  1. Remove dough from parchment and use a Mickey-shaped cookie cutter. Transfer to a parchment-lined baking sheet.
  1. Bake at 325 degrees F. for 18 to 20 minutes, until edges are slightly browned. Let cool when done baking.

   6. While the cookies cool, melt red chocolate in a microwave-safe bowl, in 30-second increments, stirring after each. Once melted spoon into a pastry bag.

   7. On a parchment-lined baking sheet, pipe out medium size bows, once those begin to set, place a small dot in the center to add the bow look. Set aside.

   8. Once the cookies have cooled completely, put them on a parchment-lined baking sheet. Take the pastry bag of red chocolate and drizzle over the cookies. After drizzling the cookies, place a bow between the ears, and decorate with white pearl sprinkles to bring Minnie Mouse to life.

   9. Let dry. Serve and enjoy!
