How To Make Gideon’s Vom Krampus Cookies

  1. In the bowl of a stand mixer, cream together the cubed cold butter and the sugar, on low speed for 1-2 minutes.
  2. Increase speed from medium to high and continue beating for another 2-3 minutes until the mixture is light and fluffy.

  4. Add in the eggs, one at a time, and add the mint and vanilla extract, mixing well after each addition.

  7. Mix until incorporated.
  8. In 2 medium bowls divide the baking chips in half, placing each half in a separate bowl.
  9. Add 1 bowl of the baking chips to the dough, on low-speed mix until incorporated.
  10. Remove the dough from the mixer and cover. Refrigerate for 30 minutes.
  11. Using a large cookie scoop, scoop out cookie dough, and using your hands, shape the chilled dough into large dough balls.
  12. Cover the entire surface of the dough ball with baking chips from the second bowl.
  13. Fill in any and all gaps with the baking chips.
  14. Place the dough balls on a parchment-lined baking tray and cover.
  15. Place in the refrigerator overnight.
  16. Remove the dough balls from the refrigerator and set them to the side.
  17. Preheat the oven to 400 degrees.
  18. Bake on the center rack of the oven for 15 minutes.
  19. Remove from the oven and let cool for at LEAST 15 minutes on the baking sheets.
