How to Make Little Mermaid Cupcakes

These little mermaid cupcakes do take a little time to make, you will need to let the fondant mermaid tales sit overnight to harden for the best results, but the end result will be completely worth the time and effort!

Fondant Mermaid Tails

To make your fondant mermaid tales you will need blue fondant, Wilton color mist in purple and gold, a mermaid tale fondant mold, cornstarch, a parchment-lined baking sheet, and a small paintbrush. Apply a light dusting of cornstarch to your hands and work the cornstarch in your hands to make it pliable.

Take your paintbrush and dust the mermaid tail molds with cornstarch, and then press about 1 ½ tablespoon of fondant into the mold.

Leave the fondant in the mold for a few minutes to set before removing it and placing it on your parchment-lined pan. Once you have made all 18 mermaid tails let them sit on the counter to dry overnight.

Spray the fins of the mermaid tails with the purple color mist, and the whole mermaid tale with the gold color mist. Your mermaid tails are now ready to top your cupcakes!

French Vanilla Cupcakes

So what do you need to make these delicious little mermaid cupcakes at home?  For the cake part of your cupcakes, you will need a box of French vanilla cake mix, eggs milk, softened unsalted butter, sprinkles, and white cupcake liners.

Preheat your oven to 350 degrees, put the cupcake liners in your muffin pan, and mix your cake ingredients in a stand mixer. Once the batter is ready, fill your cupcake liners ¾ full and bake for 21 minutes. Allow the cupcakes to cool completely.

Homemade Vanilla Frosting

For your homemade vanilla frosting, you will need softened unsalted butter, powdered sugar, heavy whipping cream, vanilla extract, sky blue gel food coloring, and your remaining sprinkles from the cake batter.

You will also need a piping bag with a wide star tip. Mix all of the ingredients together in your stand mixer and combine until the frosting is creamy, combined, and holds a stiff peak.

Scoop the icing into your piping bag and start by piping a ring of frosting around the top of the cupcakes.

Dip the cupcakes into the remaining sprinkles, and then place a dollop of frosting into the center of the cupcakes. Now you are ready to add your fondant mermaid tails to the top of your cupcakes.
